AOP VENTOUX 95% Syrah 5% Viognier

CÉPAGES Chardonnay 50% Pinot Noir 20% Gamay 20% Aligoté 10% VINIFICATION Le rendement est limité à 50 hl/ha. Vendanges manuelles. Notre cuvée Baron Maxime Crémant de Bourgogne se fait à température contrôlée afin d’assurer le bon déroulement de la vinification. Nous laissons le vin vieillir sur lies pendant minimum 12 mois, ce qui permet une prise de mousse naturelle. Cette élaboration lente se nomme la méthode traditionnelle dont la spécificité est une seconde fermentation dans la bouteille. Alcool : 12% Sucres résiduels : 10-12 g/L DÉGUSTATION Couleur pâle et jaune aux reflets brillants. Nez frais et "oral avec des notes d’amande. Généreuse sensation en bouche suivie d’une jolie finale. La fraîcheur et les arômes de fruits se mêlent avec élégance. Ce Bourgogne mousseux est idéal pour l’apéritif et accompagnera parfaitement vos plats de poissons et crustacés. Température idéale de service : 6-8°C

CÉPAGES Mauzac 85% Chardonnay 15% VINIFICATION Les rendements sont maintenus bas et les raisins sont tous récoltés à la main en douceur pour éviter toute oxydation avant le pressage. Le rendement moyen est limité à 50 hl/ha. Les vendanges sont exclusivement manuelles. Ce Baron Maxime a une vinification à température contrôlée. Il suit une " Méthode Traditionnelle " où une seconde fermentation a lieu en bouteille. Elevage sur lies pendant 9 mois. DÉGUSTATION Sa mousse est fine et persistante. Le vin révèle des arômes délicats d'acacia avec des notes de pêches. Doux et frais en bouche, il affiche une belle onctuosité avec une finale agréable et crémeuse. C'est une boisson idéale pour l'apéritif (sec ou en cocktail) ou pour accompagner du poisson (truite) ou des fruits de mer (crabe, crevettes). A servir frais, entre 7 et 9°C.

On the palate, there are pronounced notes of cocoa with a complex finish on tobacco aromas. La fraicheur, la finesse et la tension puisées dans le merlot de Gascogne issu d’une macération pré-fermentaire à froid de 4 jours, présentant une belle vivacité et un faible degré, assemblé avec une jolie syrah ensoleillée du Languedoc pour le coté fruit, soyeux et chaleureux. Le Colombard pour son acidité et sa fraicheur. DÉGUSTATION La fraicheur et la tension se révèle dès la premier gorgée. Des notes subtiles d’agrumes et de fruits jaune viendront égayer vos papilles à l’apéritif ou encore être le partenaire idéal d’un melon, une viande blanche ou d’un poisson grillé. Ce vin est idéalement servi à 8°C-10°C.

Une source pour le Muscat : - Vendange nocturne. Fermentation à température contrôlée. DÉGUSTATION Légèrement de couleur paille, un soupçon de teinte verte ; ce Colombard - Muscat se distingue par son nez frais, ses notes d’ananas, de litchi et de fruits tropicaux. Frais et croquant, il se fera le compagnon idéal pour vos apéritifs et s’accordera avec des plats de fruits de mer, en salade. Ce vin sera idéalement servi à 8°C-10°C

IGP MÉDITERRANÉE. 100% Marselan

CÉPAGES Chardonnay 100% VINIFICATION Après la récolte des raisins et leur pressurage, la fermentation alcoolique s’effectue ensuite naturellement avec des levures indigènes : 30% en fûts de chêne et 70% en cuves inox thermo régulées. Ce processus long et naturel conférera au vin plus de complexité. La fermentation malolactique s’effectuera aussi d’elle même naturellement. L’élevage dure environ 12 mois et se fait comme pour la fermentation pour 30% en fûts de chêne et le restant en cuves inox thermorégulées. Le vin est mis en bouteille au château puis repose en bouteille avant l’expédition. DÉGUSTATION Cette cuvée de Pouilly-Fuissé est dotée d’une robe brillante d’un or pâle soutenu. Son nez, très ouvert, exprime des notes d’aubépine, de fleur d’acacia et d’agrumes ainsi qu’une légère touche d’épices. L’attaque en bouche est fraîche, légèrement acidulée, et crée progressivement une sensation de rondeur. La note d’agrumes confits est présente.

TERROIR & ESTATE Domaine Saint Andéol is a family-run estate since six generations. Located in the Cairanne appellation, in the southern part of the Rhone valley, it was built upon the remains of an old monastery (Prieuré de Saint Andéol) dating from 1123! The Cairanne appellation was recognized in 2016 as a “Cru”, the highest level of AOP classification in the Rhône Valley. The vineyard is planted on clay-limestone soils covered with rolled pebbles. This Cairanne Excellence comes from old vines (30 to 80 years of age) with a very low yield of 30 hl/ha. GRAPE VARIETIES Grenache 60% Syrah 40% WINEMAKING After manual harvest, the grapes are fully destemmed upon reception at the cellar. Each variety is vinified separately, in a traditional method. Temperature-controlled fermentation allows for long maceration (3 to 4 weeks). Extraction of flavors, color and tannins is increased by unballasting, pumping over the must, and punching down the caps.

GRAPE VARIETIES Sauvignon Blanc 100% WINEMAKING The harvest is exclusively manual and in the cellar, the vinification is managed in a traditional manner in stainless steel tanks with a strict control of the temperatures and a minimum of intervention, in order to preserve the purity of the fruit and the Sauvignon varietal aromas. The wine is aged on lees for six months. TASTING NOTES The color is brilliant with golden highlights. The nose is of good intensity and exudes aromas of ripe yellow fruit completed by stony mineral and fine vegetal notes. On the palate, the attack is round and fresh, followed by a lot of volume in the middle of the mouth; a nice tension settles harmoniously, the whole feeling is firm and ends on a long retro-olfaction of lemon and stony mineral flavors.

This cuvee “La Côte Rousse” is produced mainly from old Syrah vines planted on rissian terraces (sands, gravels and siliceous rolled pebbles) dating to the ice ages, allowing a very low yield (25 hl/ha), resulting in highly concentrated wines.

GRAPES VARIETIES Syrah 50% Grenache 40% Mourvèdre 10% WINEMAKING Grapes are harvested by hand, sorted and destemmed in order to make a traditional fermentation with a maceration which lasts around 5 weeks; an alternative method used also is the carbonic maceration. The wine is aged during 18 months (in barrels for 12 months plus an additional period of 6 months in tanks). TASTING NOTES Engaging nose of red and black fruits with spicy and toasted notes. Ample, solid, and full-bodied mouth with ripe Mediterranean flavours. A generous wine which combines concentration, power, and freshness with a delicate fragrance. Served ideally between 16 and 18°C, this wine will be perfect with a grilled beef medallion with chanterelles, poultry or even game. It will also go well with exotic cuisine such as chicken chop suey, spicy dishes and of course a nice cheeses platter!
